Crispy Anchovy Sambal with Jering
A bold and flavourful sambal combining crispy Jeeny’s Dried Anchovies with jering in a sweet, spicy and tangy chilli coating. Perfect as a savoury accompaniment to steamed rice or as a crunchy snack.

Ingredients
- 7 jering, sliced and cleaned, 1 packet Jeeny’s Dried Anchovies, 1 piece tamarind slice, 2 tsp salt, 3 tbsp sugar, 20 ml water
- To Blend :
- 3 red chillies, 10 dried chillies, 5 cloves garlic, 5 shallots

1. Fry Jeeny’s Dried Anchovies until crispy, then set aside.

2. In the same pan, fry the sliced jering until lightly golden and cooked through.

3. Blend the red chillies, dried chillies, garlic and shallots into a smooth sambal paste.

4. Heat oil and sauté the blended paste until fragrant.

5. Add the tamarind slice, salt, sugar and water.

6. Simmer until the sambal thickens slightly.

7. Add the fried jering and crispy anchovies, then stir until evenly coated.

8. Continue cooking until everything is well combined and crispy.

9. Allow to cool slightly before serving with rice or enjoying as a snack.
